2 oz. HUE Vodka
1 oz. fresh prickly pear juice
1 oz. fresh lime juice
3/4 oz. house-made mint simple syrup
1 oz. San Pellegrino Prickly Pear
Build all ingredients except San Pellegrino in iced shaker. Shake and strain into iced highball glass. Top with San Pellegrino. Garnish with prickly pear slice and Black Ink Bitters Cranberry Hibiscus.
