American Fifth High Rye Bourbon, house-made beet maple shrub, fresh mint, soda

2 oz. American Fifth High Rye
2 oz. house-made beet maple shrub
4 mint leaves
2 oz. soda

Muddle mint leaves with shrub in shaker. Add all other ingredients. Shake. Strain into iced highball glass. Garnish with ginger/beet/ginger skewer.
